yea I'm hoping for more myself to be made for iPhone like Settles of Catan, Apples to Apples, Lost Cities (stuck with playing that on DS for now), Blokus (just came out for PSP), Can't Stop, Hey That's My Fish, Hive, Ingenious, Time's Up, Wits and Wagers, Quoridor or any abstract games on boadspace.net. We can always dream.
Mainly, at least for now, most are word games and puzzle games out for iPhone. Here's my list of http://mrbass.org/iphone/bestgames. Don't hold your breath but yea EA is coming out with 3D Monopoly in Nov so you can blow $10 on that one...hey now.

I downloaded a free version of Mancala to my wife's iphone. Single player, multiplayer on same phone, or online matchmaking. It's free but it has about a 5-10 second ad between games.
She won't let me play with it enough to get any more gams.

Just downloaded a new game called Karma Star....it's $5, and is pretty fun. Kind of a mix between a board game and a strategy game.....Each game only takes about 10 minutes to play.
Wish it had online play though, maybe it'll be added later.

Anyone know how the developers go about developing such games (Carcassonne, Roll Through the Ages, Small World etc.)? Do they actually have a license from the game publisher to develop an iPhone game totally based on a board game from another company?

Yes, a license is required to develop an official iPhone version of an existing title.
There have been a few knock-offs that have survived Apple's scrutiny (like Lux being a Risk clone) but you'll see that most board games on the iPhone or iPad give credit (usually quite prominently) to the original game designer / publisher as part of the license agreement.
On a related note ( ) my iPhone / iPad game development company has licensed a number of games that are popular on BGG for iPhone and iPad. Watch for announcements, forum postings, ads, etc. starting in the next few weeks!

There is a "Risk" like world domination game called Dominion available for the iPad and iPhone. Not to be confused with the popular card game, here's the link if you are interested;
