My wife made some candied ginger the other day, and the by-product of this is a ginger sugar syrup. Well, reduced slightly, chilled, and mixed with some ice and a cold club soda, and it's very tasty ginger drink.

heh... i made homemade ginger ale and eggie put the candied ginger in waffles. awesomeness abounds. I guess as long as homemade ginger ale is some part of the process, you can't go wrong.

My Dad used to brew ginger beer. My earliest memory is the smell of our laundry - ginger and yeast from all the exploded bottles. It was volatile stuff.
