If I play Forge can I trash any number of cards and if there is no card to gain at required cost, then I don't have to gain it? Say I trash cards costing seven, but there is no available card costing 7. Can I still trash those cards?
Forge - "Any number" includes zero. If you trash no cards, you have to gain a card costing if you can. This is different from how cards like Expand work if you do not trash anything, because Forge looks at the total, not at any one card's cost. If there is no card at the required cost, you do not gain a card. The card you gain comes from the Supply and is put into your discard pile.

Do everything you can, in order.
First, you trash any number of cards.
Then you gain a card of cost equal to the total cost of trashed cards (if possible).
It's totally legit to use Forge to trash cards whose total cost makes it impossible to gain anything with Forge.

If there are no cards available at 7, then all the Forges are gone, and if all the Forges are gone, then I want to know what's been going on.
(Okay, maybe they've been mass Swindled, or maybe you got yours from the Black Market. But still.)

Yeah, I was thinking the same thing. I guess it's technically possible, but I'd say this is most likely to happen if you Forge to a 4 and there are no 4-cost cards available. Or maybe even 5 if the Duchies are gone.

Or maybe even 5 if the Duchies are gone. How about if you are playing with Forges and Upgrades (or Remake)? Upgrade my Gold into a Forge. Upgrade my Forge into a Province. But with this strategy, I'm not sure what you would be using a Forge on for a total cost of $7. You wouldn't want to use Forge on another Forge and a bunch of copper if there are no Forges left. You could Forge a Upgrade and Estate, but you probably wouldn't want to get rid of the Upgrade, especially when it could have been played that turn to Upgrade the Forge instead anyway! Same with Remake - you could Forge a Remake and Silver, but would probably rather prefer to Remake the Forge into a Province.
I've seen similar strategies with Upgrades/Remakes causing a run on Banks, and don't see why the same wouldn't happen with Forge.

I've frequently used the tactic of buying multiple forges, and trashing a forge with coppers/curses and using that to buy another forge.
It helps me clean out my hand and also robs others of buying forges (if you get them fast enough) - but it's only for long haul games
